With Monsieur Paul (2 visits), Georges Blanc is, in my opinion, one of the best stop of the province in France (4 visits).

What I appreciate above all here is an atmosphere that invites you to tranquility. During my last visit, the path between Bresse and Dombes was under a fog of a rare density. This forced me to a beneficent procrastination to then calmly approach the table that awaited us.
This will summarize the advice I will give you to approach this restaurant, enter into peace with yourself and the pleasures will follow themselves. Do not approach these places with a punctilious mind while seeking controversy.
Georges Blanc is one of the few chefs who doesn’t suffer the trendy denigrating buzz. And if some try, the result is often a blown poorly soufflé. Do not push this door hoping smoke carbon vapors or submerge nitrogen at 77.36 degrees Kelvin.
Not that it is encroached in a sclerosing conservatism, but here, we know the bases.
