Terres de truffes – Nice – France
If the starter, a small tureen of crème fraiche, cocoon of truffle and foie gras, covered with a puff pastry is absolutely succulent, the lamb’s shoulder cooked eleven hours, is a little disappointing. Not enough fat, too dry, served with a meat broth too salty (reduction too strong, probably), back in the kitchen and income mounted fresh cream to soften. Of course, do not expect fresh Melanosporum in summer! Here we work a lot the summer truffle.
Good dessert. Very good service.
Wine list a bit poor considering the claim of the restaurant.
The only real inconvenience comes from the Italian restaurant opposite who hires in the summer a pair of guitarists absolutely scary. But we can not do much since in contrast to USA, the use of firearms is not commonly accepted in Nice.
