Here is a hotel that has beautifully made its transition to the twenty-first century by passing from marble and other gilding to a natural setting, following the curves of the wood and embracing the spirit of tranquility of the place.
You can get a glimpse of the place when you go by shuttle to Ile aux Cerfs. You must pass in front of the beach and the villas. We have lunch at the Republik restaurant on our way back from an excursion to the south of the island.
The menu has a somewhat strange format, probably designed by a graphic artist under the influence of psychotropic substances.
As for the chef, he was leaving for another Shangri-La hotel. In discussing with him, he informed us that the design of the menu had been made without much consultation with the cooking team! Interesting concept but that is not the most effective way to express the kitchen’s capabilities.
We still had a nice lunch of shrimp in tempura accompanied by a nice tartar sauce.
Still some shrimps but on bed of corn and beans. The combination of the two being a bit excessive in floury textures.
Dessert makes chemistry work with pearls passion fruit accompanying their ice cream.

As we were almost alone, we were offered two cocktails to laze by the pool after the meal. Very nice!
I will go there again (one evening if possible) in 2018 to validate the changes.
