THE soufflés !

Should we break the myth of the soufflé?
In fact, it’s pretty easy to do. But like many dishes, we make a great deal of fuss about it. As I am not a recipe site, I will avoid the description. On the other hand, once, take your courage with both hands and embark on it. It’s very rewarding when you take it out of the oven.
Be aware, however, that the only real difficulty is the blend with beaten egg white. Then it is difficult to substantially increase the taste of the mixture without unbalancing it. So, what may not please you is the fadeness of the result. But here, it’s everyone’s taste buds.
In the meantime, if you’re lazy, you have the Recamier, “THE” soufflé restaurant in Paris. Of course, do not complain that people who frequent the place are treated better than you. You are in Paris, you forgot?
You can hope that the recent arrival of Thierry Clément will help to get back on track a service that sometimes had the tendency to treat the customer flippantly.
As for the rest of the menu, if you’re not a regular, skip it. After all, we come here for the soufflés.
Obviously, it’s a bit expensive for what it is but it’s your fault, I told you to start cooking!
