Le Procope – Paris – France Visit Review: 12

A place stepped in history.

When I tell my US clients that our oldest café still open was 90 years before their declaration of independence, they can’t believe it as they buy from their antique dealers objects 50 years old.

It is therefore quite logically that we see them rushing up into this place to convince themselves that there was an evolved civilization before them, that Humanity did not go directly from the Stone Age to the Fourth of July. Nevertheless, I regularly have customers who ask me if they can drink tap water in Paris …

Let’s go back to Procope, flagship of Groupe Blanc passed into the hands of Groupe Bertrand recently. Wikipedia is a wonderful information medium (to which I give my money, do as much), I will not do a history lesson, I invite you to follow this link.

As for the menu, we can only hope that it will have nothing in common with the other renowned institutions of the Group, the fast-food Burger King.

To date, we are in the classic Parisian brasserie, as the snails are big, Burgundy and Red Label and they put Parmesan on Dauphiné ravioli and mushroom puff pastry. The dishes line the great classics with calf’s head, blanquette of the same animal and braised cheek of his castrated uncle. Small mistake of taste (probably to please our tourists above-mentioned), they limit themselves to Canadian lobster cooked in casserole rigatoni.

A very small work effort and they could pretend to Suzette crèpes rather than simply flambées Grand-Marnier.

A beautiful staircase, beautiful rooms hung on both sides of a maze, a balcony with places counted, late service, what to think about a stop.
