Like a hen in front of an egg
To be honest, I hate this kind of restaurant in which I feel as silly as a hen in front of an egg. Minimalist portions, exorbitant prices, great culinary pretension … And yet, nothing to complain about since it’s good. And I love everything about Japan, the delicacy that some people know how to express without saying it.
So let’s go: overall, a great job but sometimes so much recherche after that it becomes … not found. Plates that look more like works of art than a consumable. It’s beautiful, it’s unmistakable, it’s very original, they are associations of very creative flavors, a finesse of astonishing taste but without explosion in the mouth.
Perhaps I have not gone far enough into the philosophy of the concept? It is true that it occupies a page of the website. But only in English. You are lucky!
To conclude, I can only recognize a very high quality of work, research products, synthetic reflection on the presentation and taste. After all, chef Atsushi Tanaka does not come out of Jupiter’s thigh but still from Pierre Gagnaire’s kitchen. But the disappointment can come from a discrepancy between the visual intensity of the plate and the organoleptic result. Too much intellectualism kills intellect.
The frame is a gray sad to cry. A few sticks from a giant Mikado game dot the wall.
